I made the mistake of cooking my potatoes too long the first time but still made for a delicious version of mashed potatoes.

I was looking for a new potato salad for Father's Day to accompany ribs. I kept true to the recipe and have to say thank you! It is creamy and tasty with simple ingredients. The pimentos add a wonderful flavor after everything had time to mingle! Will be making this all summer long! Perfect addition to my cookout recipe collection.

Made this for a potluck for my college/married Sunday School activity, we are conservative Baptists and we went full Pentecostal over it! Lol

Seriously though, it was a hit. I doubled the recipe, and used red potatoes, otherwise stayed true since it was my first go around. My wife thought my usual potato salad is great, but this one knocks it out of the park. Looks like I have a new go-to!

I've made this twice now, most recently for July 4th BBQ. It is always a pleaser....but how could you really go wrong with potatoes and bacon? Will make this over and over, to be sure.

This is my go-to "company" potato salad. The only difference in this one & mine is that I add grated cheese to get closer to the loaded baked potato idea mentioned by Keiko123, above.

Made this exactly according to the recipe..I thought you were supposed to , in order to give it a fair rating??? Sorry, but adding things and taking things out and substituting isn't the same recipe. This salad had a nice flavor, reminded me of a loaded bake potato and I liked that it didn't have a lot of mayonnaise and the subsequent hung-over mayonnaise taste. I think the pimento is actually what brings all the flavors together. For ease, better to buy a small can of chopped pimentos next time, the pimentos are kinda slippery to chop and I ended up using kitchen sheers. Good make ahead recipe and although I won't say it's my all time favorite potato salad recipe, I would certainly make it again. I think this is a recipe that deserves all the correct ingredients..bacon bits? No thank you. Give me real bacon. I served it with grilled chicken and baked beans to give to our new pastor's family for their first night in their new home here.

This is absolutely the best potato salad ever! I made this for a large party. I doubled the ingredients, but tripled the sour cream and mayo dressing. I also added two grated hard boiled eggs, and one teaspoon of celery seed.

This potato salad is delicious! Very light and flavorful... not heavy like most potato salads. Although I felt the amount of potatoes called for was too much for the amount of mayo and sour cream they asked for, so I just left out some potato. Otherwise, its perfect! A little extra bacon doesn't hurt either! :)

Very Good potato salad recipe! Instead of 'frying' bacon, I used the Real Bacon bits instead...just sprinkling until I though it was enough..which was probably about two tablespoons. I also used 1/4 tsp of celery seed (per stalk) because I did not have fresh celery. I used red potatoes..left the skin on..and cooked until just tender, then drained. I also added just a sprinkling of dill seed...fantastic!!! Thanks for a great recipe....I will be making this again! :-)

This is the best potato salad EVER! The only change I make is that I use celery seed instead of celery because I can't stand celery. I've made it for two large gatherings and everyone raves. So yummy!

Tried this with Hidden Valley Ranch Dressing in place of the Mayo and sour cream, extra bacon, and no pimiento. Wonderful, my family loved it. We have it at least twice a month.

This potato salad was a hit at our last family gathering, it is even better the next day. The only change I made was substituting olives for the pimientos. If you have the time boil the potatoes whole the night before and put in the refrigerator overnight, this makes the potatoes easier to work with and the potato pieces firm. I have already given the recipe to several people.

My daughter's favorite and everyone else too. We use fresh diced red bell pepper instead of pimento. A few extra slices of bacon doesn't hurt either. Daughter and Dad highly recommend.

Yummm !!! I've been making my mom's mustard potato salad for years and wanted to try something new for a bbq. This is my new favorite ! I think it's the bacon and sour cream that add the punch. I grated boiled eggs into the salad, too. It was so good I could not stay away from the salad ! I made myself sick but I could not step away from the table ! Great as left overs, too.

I made this for a dinner party, and everyone really liked it. Most potato salad recipes have too much mayo in them, and this was just right. The crumbled bacon made it even better. This tastes similar to fixing a baked potato. Chopping the fresh ingredients did take a little longer than the prep time given on the recipe though.

FAQs

How to make creamy potato salad with bacon? ›

In a large bowl, whisk together the mayonnaise, sour cream, vinegar, ¾ teaspoon salt, and ½ teaspoon pepper. Add the potatoes and celery and toss to coat. Fold in the parsley, tarragon, and bacon before serving.

Should I peel potatoes before boiling for potato salad? ›

Drop a whole russet into the pot and by the time the outside has cooked through, the inside will still be raw. Larger potatoes should be cubed to ensure they cook evenly (peeled first if desired). Smaller potatoes tend to have thin skins and can be boiled whole, no peeling required.

What if I put too much apple cider vinegar in my potato salad? ›

Sugar can also counteract the taste of vinegar

In doing so, the potatoes will absorb the vinegar, and you'll be able to pour out the excess that collects at the bottom of the bowl. After this, you'll want to gradually add sugar by the teaspoon, mixing and tasting as you go.

Should you rinse potatoes in cold water after boiling for potato salad? ›

Rinsing potatoes helps remove excess starch, so it is recommended to rinse the potatoes before cooking. To ensure even more starch is out of the way, it's recommended that they even be quickly rinsed after boiling. We recommend using hot water for rinsing after boiling and cold water prior to boiling.

Does mayonnaise go with bacon? ›

Yes they do, especially when the mayo is applied to toast, with lettuce and tomato added to the bacon.

Is it better to boil potatoes whole or cut up for potato salad? ›

Starchy potatoes should be cooked whole with the skin on, then peeled and cut after they're cooked. Select medium Russet potatoes, not large ones, to ensure the skin doesn't split while cooking. Peel them when they're hot (wearing disposable gloves to protect your hands from the heat), then cut them into cubes.

What goes bad in potato salad first? ›

But the truth is, mayonnaise isn't your main concern when it comes to spoilage. The actual culprit is the potatoes. Yes, it's true! The humble, reliable potato is a hotbed for bacterial growth if improperly stored after cooking.

Why does my potato salad taste so bland? ›

If it's a potato salad, be sure to let the potatoes cool (the starch cells close up) before adding any dressing or salad mixture. Warm potatoes will soak up the liquids. Taste an hour after mixing and see if the spices need tweaking. Mashed potatoes do the same thing if you add in the garlic or cheddar cheese too soon.

Which type of potato is best for potato salad? ›

Waxy potatoes are generally considered the best for classic potato salad because they retain their shape, you don't have to peel them, and they have a smooth texture. People who prefer a creamy potato salad that soaks up dressing like a sponge, though, opt for a starchy potato.

How long should you boil potatoes? ›

In general small or cubed potatoes will take about 10 to 15 minutes to boil, while larger, whole potatoes will take between 20 to 25 minutes. To check potatoes for doneness, insert a knife into one. If it slides in without much effort, you're good to go!

Can you cube potatoes before boiling for potato salad? ›

Always cut up the potatoes into a dice before boiling them. If you boil the potatoes whole, the exterior of the potato will get too soft and crumbly before the interior has a chance to cook through. What if I put too much mustard in my potato salad? ›

Not Getting The Cook Time Right

How do you keep potatoes from getting mushy in potato salad? ›

The starch in potatoes is held together by pectin. When that pectin breaks down too quickly in the boiling process, mushy potatoes result. Adding vinegar to the water fixes that problem because, as López-Alt explains, “pectin breaks down much more slowly in acidic environments.”
