I’ve always loved scones. It’s one of my favorite indulgent breakfasts that is the perfect balance between a biscuit and a cookie.

This rich dessert breakfast has a crunchy bottom, sugar glazed top and buttery soft middle with chocolate chips scattered though-out.

SCONE RECIPE

Ingredients

  • 3 cups all purpose flour
  • ⅔ cup sugar
  • 2 tsp. baking power
  • ½ tsp. salt
  • ¾ cup cold unsalted butter (1 ½ sticks)
  • 1 cup chocolate chips
  • 1 egg
  • 1 cup half and half
  • 1 tsp. vanilla

PREHEAT OVEN TO 425°

In a large bowl add 3 cups flour, ⅔ cup sugar, 2 tsp. baking powder and ½ tsp. salt. Combine

Cut in cold butter using a pastry cutter or a fork.

*If you don’t have a pastry cutter, you can also use a food processor. Blend until it resembles course crumbs. Be sure to transfer your mixture back into a large bowl or you may overwork the mixture.

Combine 1 egg, 1 cup half and half, and 1 tsp. vanilla into a small bowl. Whisk together.

Add liquids and chocolate chips to flour mixture and fold in.

Line a cookie sheet with parchment paper and use a tablespoon to drop a generous amount into a biscuit shape.

Brush with milk and sprinkle with sugar.

Bake at 425° for 18 minutes or until the edges reach a golden brown.

THE SECRET TO GREAT SCONES

The secret to a great scone is to keep your cold ingredients cold. Cold butter and cold half and half.

This recipe makes approximately 24 scones, but when you’re waiting to rotate your bake, you should keep the batter in the fridge until you are ready to use it.

When measuring flour, scoop TBS into a measuring cup and level using a butter knife. Dipping the measuring cup directly into the flour bag and pushing it against the side will cause you to use more flour than intended.
